ABOUT MAASH®

______________________________sssss

In the evolving field of submerged fermentation, MAASH leverages 30 years of expertise to blend cutting-edge technology with sustainable principles. This method is central to our mycoprotein production, transforming an EU-approved filamentous fungal strain into a high-quality, naturally textured protein source.

We precisely manage fermentation parameters like temperature, pH, and oxygen supply to ensure optimal yield while preserving the mycoprotein’s functional and sensory qualities—neutral in taste and rich in nutrition. This balance allows us to consistently deliver exceptional mycoprotein.

MAASH collaborates with companies to enhance their products by incorporating our mycoprotein, reducing meat content by 10 to 30%, or developing vegan and vegetarian options. We are committed to providing a sustainable, high-quality alternative to animal protein at competitive prices.

VISION

Reshape the food industry for more sustainable and responsible protein consumption.

MISSION

Enhance meat products with sustainable mycoprotein to reduce animal protein usage.

COMPANY TIMELINE

2020
Investation of mycoprotein

With 30 years of industrial fermentation expertise, Frédéric explored innovative protein production methods through fermentation, ultimately identifying mycoprotein as a sustainable solution for the future of food.

2021
MAASH is officially founded

Frédéric and Gaspard founded MAASH to produce mycoprotein and develop the project, with a clear vision and a well-defined mission guiding their efforts.

2022
Research launched

MAASH launched research with the right experts in fermentation, unlocking the full potential of mycoprotein production at lab scale.

2023
Development at pilot scale

MAASH successfully fine-tuned the findings from its research, validating the production process at pilot scale, representative of the process used at industrial scale.

2024
Industrial development

MAASH began developing the engineering based on years of research and development, while actively searching for an industrial site to establish production at an industrial capacity.

Today
MAASH new plant

MAASH secured its initial plan aimed at achieving its first industrial capacity by 2026.
